With 92 % water content, watermelon is at the top of the summer refreshment list! Close on its heels comes the melon from which is borrows its name in certain Anglo-saxon countries (watermelon). Chock-full of vitamin C and carotenoids, these fruits can be eaten in generous slices. Their ovoid or round-shape males them particularly interesting for structured desserts where they can be used as an exotic skewer display. With a cuillère parisienne creuse, you can prélever balls of flesh which you can then put in their hull whose edges have been cut in a zigzag. A few leaves of mint, a drip of grenadine or grated coconut and you have a healthy colourful refreshing dessert. Unforgettable as granité, left to set in the freezer for two hours, they give added freshness at the end of the meals. With Parma ham or goat’s cheese, they are also a pure visual and tasty delight.
