Fig preserve
Ingredients:
  • 250g red figs
  • 150g sugar
  • 2.5 cl olive oil
  • 1.5 cl vinegar
  • Juice of one lemon
  • 5 g salt
  • Thyme
  • Pepper
  • Rosemary
 Preparation:

Wash and cut the figs in 4.
Cook the vinegar and the lemon juice over low heat with the sugar until it dissolves. Then add the figs and olive oil. Add salt and pepper, and then add the thyme and rosemary.
Simmer for 20 to 30 minutes, until the figs have melted.
Pour the still hot preparation into sterilized (around 15 minutes in boiling water) glass jars with hermetic lids and close immediately.
